Specially designed to cook a whole fish at once, poachers such as this were responsible for many a wonderful meal in 18th & 19th century Europe. The cookware type is still available new in culinary stores, such as Williams-Sonoma and Sur la Table, proving its original design was impeccable! This example features an iron handle with nib for centering next to an open wood fire, which has been artfully shaped and hand-riveted to the sides of the copper ridge. Hammer marks from the artisan are clearly visible on the flats.
